Hooray For Curry

Hello,

I'm wild for curry, more precisely Chana Masala, so you will understand my excitement at the start of National Curry Week. Obviously I will be taking full advantage of this excuse to feast on the food royale.

I'm sure The Fat Sparrow will have the spouse sparrow slaving over a hot stove all week in honour of this wonderful occasion.

I on the other hand would like your recipes for quick easy curries I can rustle up after a hard days work.

That recipe looks yummy, I will have to cook it at some point.

very nice! my variation of that recipe for a v. quick shortcut - ( after work..i need all the shortcuts i can get!) i use chickpeas from cans from the supermarket - they work just as well and no soaking no nothing. also what i do to really add the spice 'kick' is to get fresh cumin seeds ( jeera) and heat them up on a dry pan - to dry roast them - really hot - till they pop and smell gorgeous. traditionally one would have to grind them etc. but moi - i just use the base of a wooden spoon for a quick crush and in they go. takes about 5 mins and the scent is fabulous. onion garlic ginger chilli and fresh tomatoes and a bit of tomato puree and its ready in like half an hour..

Nice tip Sonia about the cumin seeds. I'm definitely a tinned chickpeas girls although I think the texture of dried chickpeas you soak yourself is usually better. That said the quality of all tinned pulses seems to have improved in recent years.

Nishaan do a fried onion curry base which is reportedly very good for whipping up a quick curry.

Coriander seeds also smell wonderful when heated in a pan.

I'm wild for coriander leaves seeds powder anything.

I'll keep my beady eye open for this curry base.
